  • 1. Preheat oven to 400 degrees.
  • 2. Place the uncooked chicken wings and drummies in a large bowl.
  • 3. Add the grapeseed oil and salt and pepper, to taste.
  • 4. Using your hands, toss the chicken in the oil and seasoning mixture until well coated. Set aside.
  • 5. Line baking sheets with parchment paper and then place an oven-safe wire rack on top of the parchment paper.
  • 6. Distribute wings/drummies on the wire rack so that they are in a single layer.
  • 7. Bake wings until they start to brown (about 50 minutes) or until cooked thoroughly – chicken should be cooked to a minimum internal temperature of 165 degrees.
  • 8. While the chicken is cooking, prepare the glaze. In a medium-sized bowl whisk together the maple syrup, apple cider vinegar, mustard, and shallots.
  • 9. Add as little or as much salt, pepper, and red pepper flakes as desired.
  • 10. Once the wings and drummies are cooked, remove from the oven and set aside.
  • 11. Take the glaze and transfer to a medium-sized skillet and cook on medium-high heat until the glaze starts to thicken.
  • 12. Take each chicken piece and carefully roll in the glaze and then transfer back onto the wire rack.
  • 13. After all the chicken has been coated, return to the oven and cook for 10-15 minutes.
  • 14. Remove from oven, and enjoy!
