If you want to improve your diet, you need to learn the essential skill of meal prep. In her Book: Vegan Meal Prep: A 5-Week Plan with 125 Ready-to-Go Recipes (Robert Rose) Robin Asbell lays out strategies and plans that allow you to cook whole, plant-based foods and assemble them as you need to throughout your week. In this class we’ll learn about meal prepping and make some dishes from Week One in the book.

On the menu: Sweet Potato Pecan Scones, Creamy Cashew Dressing, Big Nutty Cesar Salad, & Curried Chickpeas and Kale

Winter squash is more than just pumpkin pie! The deep orange and yellow flesh of the “keeper” squash is sweet, creamy, and packed with nutrition. Learn the basics of selecting and prepping winter squash, and the many varieties to choose from. Then learn to prepare three delicious recipes that feature the sweet and savory qualities of winter squash.
